OAKHURST — Tucked away under the trees on scenic acreage in the Sierra Nevada foothills is a simply beautiful conference center equipped with sweeping views and peaceful trails, while featuring comfortable and affordable accommodations and being blessed with a brilliant executive chef capable of creating mouthwatering cuisine.
For anyone who wants to ring in the new year with friends and family in a serene setting, along with eating delicious food, playing fun games, and having music for your dancing pleasure — ECCO’s Sensible Celebration may be just the ticket.
The evening begins at 6:30 p.m. with delectable appetizers including shrimp cocktail, cheese and fresh veggies with breads and crackers, Swedish meatballs, smoked sand cream cheese crostini, and mushroom strudel, with a glass of wine.
Dinner starts with mixed greens tossed in balsamic vinaigrette with candied pecans, pickled red onion and orange segments. The dinner entree includes a choice of beef Wellington and Béarnaise sauce served with twice-baked potato and roasted winter vegetables or sesame crusted salmon and green apple burre blanc served with potato scallion eggroll and sautéed greens. For vegetarians, the chef offers grilled vegetable and phyllo Napoleon with balsamic reduction.
All meals are served to guests at the table.
Sweets table includes chocolate mousse, fruit tarts, caramel apple cheesecake and other treats.
After dinner, an evening of games and music is provided by a DJ for dancing and listening pleasure. A champagne or sparkling cider toast will be celebrated on New York time at 9 p.m. and then guests will dance and play the night away.
